Mibrasa is a closed charcoal oven. By means of a sliding system , we can perfectly control the air flow, so that the temperature can be kept under control. The charcoal is thus more efficient in use. This charcoal oven gives a unique smoky flavor to the product. The Mibrasa anticipates " artisanal " trends. This device makes for delicious aromas in our restaurant, with uniqueness in food and authentic flavors of each product. At Kok au Vin we try to serve meat in their purity, with some unusual vegetable preparations as garnish. When selecting and maturing the meat we work closely together with Beenhouwerij Maertens in Christus Koning (Bruges).
